Per fare la marmellata bisogna comprare 1 kg di frutta, zucchero o fruttosio 1 limone, vaniglia.<br />
<br />
Ho utilizzato il fruttosio 400 gr. <br />
Il segreto per mantenere a lungo la marmellata è di metterla nei barattoli e bisogna togliere l'aria, cosi' durerà per almeno 2 anni.<br />
Lavare la frutta, tagliarla a dadini, aggiungere un limone e metterla sul fuoco.<br />
Appena risulta morbida frullare, aggiungere lo zucchero oppure il fruttosio , la vaniglia e fare cuocere ancora , finchè si addensa.<br />
Metterla nei barattoli ben puliti, chiudere bene e immergerli in acqua calda, l'acqua deve coprire i barattoli.<br />
Dal momento che bolle bastano 15 minuti per piccoli vasetti, in questo modo si eliminano i batteri e si conserva in modo naturale.<br />
Non raffreddate i barattoli in acqua fredda, potete vedere il coperchio un pochino affossato ed è giusto, la sterilizzazione è avvenuta con successo.<br />

Fare dei bastoncini con la sac à poche con un becuccio liscio.<br />
Cuocere a 200 ° per 5 minuti.</span><br />

FASE 1 <br />
Dopo 10 minuti sempre nella ciotola tirare l'impasto dall'alto premendolo al centro , ripetere l'operazione 8 volte. (foto)<br />
Far riposare altri 10 minuti.<br />
Ripetere di nuovo la FASE 1 far riposare di nuovo 10 minuti.<br />

Ripetere un'altra volta la FASE 1 e poi lasciarlo riposare è per 1 ora.<br />
<br />
Quando l'impasto è raddoppiato dare un leggero pugno all'impasto per togliere l'aria .<br />
<br />
Passare l'impasto su un piano di lavoro e dare la forma ovale.<br />
<br />
Ripiegare verso il centro l' estremità dx dell'ovale. <br />
E la sx verso il centro. <br />
Si ottiene più o meno un rettangolo.<br />
Ripiegare e tirare l'estremità superiore del rettangolo di un terzo verso il centro. Ripetere finchè non si ha un panetto regolare. <br />
Fare riposare finchè non si è raddoppiato.<br />
Mettere l'impasto su carta da forno e cuocere a 200° per 30 minuti circa . Forno ventilato.<br />

Per prima cosa preparare la crema pasticcera, la ricetta è nell'etichette.<br />
Dalla crema ricavare 300 gr e metterla in una ciotola.<br />
Ammorbidire la gelatina in acqua fredda.<br />
Fondere la gelatina ammorbidita nel succo di limone, stemperare con un pò di crema ed unirla al composto iniziale. <br />
Montare la panna ed unirla alla crema (ai 300 gr)aggiungere la buccia di limone.<br />

50 gr di zucchero nel latte<br />

12 gr di gelatina <br />
150 gr di cioccolato a pezzi<br />
100 gr di pasta di nocciola<br />
500 gr di panna semimontata<br />

Preparare il Pan di spagna al cioccolato e ricavane un disco per poi utilizzarlo come base del nostro dolce!!!<br />
<strong></strong><br />
Bollire il latte, vaniglia e lo zucchero.Sbattare il tuorli con il rimanente zucchero, cuocere fino ad 85° C<strong>. (CREMA INGLESE)</strong> <br />
<strong></strong><br />
Togliere dal fuoco e filtrarla subito per fermare la temperatura!!<br />
Versare il cioccolato a pezzettini e la pasta di nocciola.<br />
<strong></strong><br />
Aggiungere la gelatina fusa precedentemente ammorbidita in acqua fredda e poi strizzata, infine la panna semimontata, dobbiamo ottenere un composto liscio e vellutato.<br />
<br />
Versare il composto in uno stampo con una base di Pan di Spagna e tenere il semifreddo nel congelatore per almeno 5 ore!!<br />
<u>Successivamente glassare il semifreddo con il cioccolato fondente</u>!!<br />

6 cucchiai di olio extra vergine di oliva<br />

2 cucchiai di miele<br />

50 gr di zucchero a velo oppure di canna<br />

180 gr di farina di Kamut<br />
1 uovo<br />

2 cucchiai di latte<br />

scorza di limone<br />
vaniglia<br />
cannella<br />
essenze di limone ed arancio<br />
pizzico di sale<br />

1/2 cucchiaino di lievito per dolci<br />

In una ciotola mescolare bene il miele e l'olio, unire l'uovo, sale e tutti gli aromi.<br />
Aggiungere i 2 cucchiai di latte, amalgamare.<br />
In seguito zucchero a velo oppure di canna ( con lo zucchero di canna vengono più scuri) e per finire la farina ed il lievito. <br />
Se la pasta dovesse essere un pochino dura basta aggiungere un altro poco di latte (poco). Inserire la punta a stella nella Sac à Poche e formare i biscottini, decorarli a piacere, semplici oppure con mandorle, nocciole ecc....<br />
Cuocere a 180 gradi per 15 minuti circa.<br />

<strong>UN PIZZICO DI VANIGLIA</strong><br />

<span style="font-size: large;">Scaldare in un pentolino la crema di latte insieme al latte.e la vaniglia.</span><br />
<span style="font-size: large;">Mettere in una ciotola con acqua fredda la gelatina e lasciarla ammorbidire.</span><br />
<span style="font-size: large;">Sbattere i tuorli con lo zucchero ed il cacao setacciato ed unirli al primo composto di latte e panna, sempre sul fuoco.</span><br />
<span style="font-size: large;">Unire alla crema la gelatina strizzata bene ed infine i cioccolatini alla gianduia.</span><br />
<span style="font-size: large;">Mettere il composto in una ciotolina oppure in più ciotole e lasciare in frigo almeno 3/ 4 ore circa.</span><br />
